Apricot,Pecan and Apple Rock Cakes



Don't let the name or the image that comes to mind put you off. These are scone like but have a little more 'cakiness' about them. They are delicious as a snack or for tea and are a interesting alternative to a scone! You can put a wide variety of different ingredients in them such as jam or chocolate. However, today I  chose to mix chopped apricot, pecan and apple into the basic rock cake mixture! The apricot and pecan pair tastily together and the chopped apple make the rock cake slightly more moist.

Courgette Fritters



If you fancy an easy and delicious summer lunch, these are definitely the way to go. This is a mix of crispy spring onion  and courgette with oozing pockets of cheese combined in a silky batter.
Pair this with a slice of lemon, a salad (I made a quick rocket salad as this is growing in abundance at the moment!)  and a Yogurt Rita with  sliced tomato's, cumber and mint to dip the fritters into. This definitely makes a great meal. If you wanted to spice it up a little, add a little chili powder to the batter or serve your fritters with your favourite chili sauces!
